Fun Salad Recipes: Avocado and Shrimp Summer Salad

Calling all seafood lovers!! Especially those, like myself (Maddie), who crave shrimp like no other during the summer time. This post comes after having been fortunate enough to enjoy the most delish summer salad that my mom made — it was so good that I knew I had to get the recipe to share it with y’all! This is one flavorful summer salad that you don’t want to miss out on and a recipe you will want to save to re-create/ impress any company you may be entertaining this summer!

Ingredients: 

  • 1 lb. uncooked shrimp
  • 1 red pepper, chopped
  • ½ red onion, chopped
  • 1 C. frozen corn or 3 ears fresh corn, cooked
  • 2 avocados, diced
  • ½ cucumber, peeded & diced
  • 1 C. grape tomatoes
  • 1 bunch fresh cilantro, chopped
  • 2 C. mixed greens
  • 1 C. croutons*

Marinade for shrimp:

  • ¼ C. olive oil
  • 1 lime, juiced
  • 1 clove garlic, grated
  • 1 t. cumin

Dressing:

  • ¼ C. olive oil
  • 1 lime, juiced
  • 1 T. spicy mustard
  • 1T. honey
  • 1 clove garlic, grated
  • Salt & pepper to taste

Directions:

  1. Combine all ingredients for marinade then add shrimp. Shrimp should be in marinade for 15 minutes or less. While shrimp is marinating, combine all salad ingredients. Skewer shrimp (easiest way to grill them) and grill for a few minutes on each side.
  2. While shrimp is grilling make dressing in a jar or covered container. Combine all ingredients and shake.
  3. Combine all salad ingredients & toss.

 

*You can buy store bought croutons, but an easy recipe is to use naan bread (or any kind of bread), chop into 1” pieces, toss with olive oil, garlic salt, pepper, and any spice you like, and bake until crispy. For this recipe I used cumin but oregano is very delicious too.
