This recipe is one that has been a long time coming on the blog- because its that fun famous salad recipe for a delish family style dinner. It’s another little ma’s recipe, one that she crafted after having had something similar out to dinner that was so delish she needed to re-create it to share with us all! It is perfect for any time of the year but we often find it being that more frequently requested and made salad during the transitional season between end of summer and into fall! Between that crisp strong taste of cilantro with the sweetness of peppers and corn mixed in with chicken fingers and chipotle ranch this is sure to please all taste buds and fill up you and your family/ dinner guests!
Recipe:
- One Container of Mixed Greens
- 1 container full of Mini Sweet Tomatoes (sliced in halves)
- 1 Red Bell Pepper
- 1/2 Onion
- 3 cups of Cilantro
- 3/4 of a cup of Pepper Jack Cheese
- 3 Ears of Corn (Or 2 1/2 cups of corn)
- Chicken Tenders (typically use entire box of Bell & Evans Chicken Tenders)
- Chipotle Ranch Dressing
